A blend of four-fifth Ellis Bitter aged in cognac barrels for 12 months with wine-barrel-aged Dabinett. It offers a nose of damp cave, ripe stone fruit, spice, and perfume. The palate balances barrel influence with juicy plum and apricot, featuring beautiful freshness and a silky texture. The softened tannins resemble wet slate, making it a truly gastronomic cider. 6.9%

A naturally sparkling dry cherry co-ferment. Whole Kent cherries underwent a carbonic maceration, to which dry cider was added for a month-long infusion. Fermentation concluded in a bottle resulting in a tangy hybrid not dissimilar to a Lambic fruit beer. All fermented with wild yeasts. 5.5%

Highly expressive perry, from an exceptional vintage year. This is heady on the nose and pallet. Nose of burnt honey, baked pear, quince and rosemary. The tannins sit lightly on the tongue and help with the structure, the mouthfeel is luscious and very elegant, the sweetness pairs well with the fullness of the aromas. 7.2%.

This perry blends 2021 and 2022 vintages. The 2021 perry matured in stainless steel for a year before being combined with the spontaneously keeved 2022 vintage, preserving a zingy, fruity sweetness.
